Grand Hyatt Tokyo Unveils Limited-Edition Mother's Day Sweets Collection for 2026

A chocolate dome that cracks open to expose fresh mango arranged like a flower bouquet is the centerpiece of the 2026 Mother's Day Sweets Collection at Fiorentina Pastry Boutique, the lobby patisserie at Grand Hyatt Tokyo in Roppongi Hills. The Flower Bouquet Mango Mousse Cake is priced at 5,000 yen (tax included) and is one of three new creations in a four-piece limited-edition collection available May 1 through 10.

The collection's most technically detailed newcomer is the Apricot Tea Savarin, priced at 3,800 yen. It is built on a classic French brioche base soaked in a liqueur-infused syrup, then finished with flower chocolate decorations. The tea syrup at its core, blended from Earl Grey, cinnamon, orange peel, and rum, earned first place at the Utsumi-kai Flavor Competition, a domestic confectionery contest for young pastry chefs. The dough is coated in apricot jam, topped with layers of orange and apricot gelée and tea cream, and finished with white chocolate cream infused with cinnamon and star anise.

The third new addition is the Mother's Day Piccolo Gateaux, at 2,800 yen. Rounding out the collection is the Grand Premium Flower Cake, sold by the piece at 2,200 yen (approximately 7.5 cm) or whole at 6,200 yen (approximately 12 cm).

The boutique will operate from 10:00 a.m. to 8:00 p.m. throughout the sale period, a slightly later start than its regular 9:00 a.m. opening, which reflects the standing policy that cakes and tarts are available from 10:00 a.m. Pre-orders opened at 11:00 a.m. on April 1 and close May 7, with reservations required at least three days ahead of the chosen pickup date. All prices are tax-inclusive, and the boutique has noted that availability may vary depending on seasonal ingredients. Given the constrained window and limited stock, securing a reservation before the pre-order deadline is the more reliable path to any of the three new pieces.
