Women-Owned Caffeto Coffee Expands From NoDa Truck to Cornelius Outpost

Caffeto Specialty Coffee has expanded from a permanent NoDa truck to a brick-and-mortar outpost inside The Outpost at 20910 Torrence Chapel Rd., Cornelius, NC 28031, Daily Coffee News reported Feb 23, 2026 that the cafe has opened and is pouring coffees roasted near Manizales from the Castellanos family farm. The article included photos credited to Caffeto showing the Outpost x Caffeto fit-out and supply-chain details linking Colombia to North Carolina.
Local coverage is not uniform about the timing of the Cornelius site. WhatNow and Qcnerve described The Outpost and Caffeto as forthcoming and projected a summer opening, while DCN’s Feb 23, 2026 piece explicitly states the cafe has opened; those outlets also report The Outpost appears in final stages of development. The Outpost’s physical listing ties the site to the Shops on the Green development and gives the address 20910 Torrence Chapel Rd.
Founder Valentina Castellanos frames the move as an extension of the family business and the farm connection. Castellanos has noted the truck’s NoDa roots: “Our truck has always lived in the heart of NoDa, a vibrant, walkable, artsy neighborhood in Charlotte with a tropical, creative energy that perfectly matches our roots. We wanted to be accessible, welcoming and woven into the daily rhythm of the city.” Caffeto’s father bought the family farm in Colombia five years ago, coffees are roasted in or near Manizales, and beans are shipped to North Carolina every two weeks, according to reporting and social posts summarized by DCN and WhatNow.
Operational details for the mobile origin remain: the Caffeto truck in NoDa sits at 3012 N Davidson St., parked near Canvas Tattoo and Chief’s cocktail bar, and WhatNow lists its hours as Monday–Friday 7 a.m.–4 p.m. and Saturday–Sunday 8 a.m.–5 p.m. Prosperausa’s profile places the truck’s launch in September 2024, and DCN likewise characterizes the truck launch as late 2024; WhatNow’s timeline is less specific, describing the truck as open “earlier this year.”
The Outpost is a hybrid retail-community concept co-created with Outsiders and Co., the adventure clothing brand run by Amy Jolly and Aubrey Welch. Qcnerve describes the space as roughly 3,000 square feet split into thirds between Caffeto, retail and a community area. Amy Jolly said of the venue, “I’m hoping The Outpost shakes things up a little bit... It’s not your typical retail shop or coffee shop; it has some spice to it. It’s full of energy and feels like home. A place you want to meet a friend or bring your family. That is the vibe we are bringing.” The Outpost’s Instagram frames the concept as “a place where people can gather together to socialize, work, shop and enjoy great coffee while embracing a lifestyle of connection and adventure.”
Menu and programming will reflect the brand’s Colombian roots and neighborhood energy. Prosperausa lists matcha, traditional Colombian desserts and baked goods at the NoDa truck and notes house music on Saturday mornings; Client Spotlight and other profiles cite plans for an expanded menu and barista workshops at the Cornelius site. Valentina said family operations will continue at the new location: “My sister is going to be the one running that business over there. I’m very excited. That’s going to make our family business keep as a family business.”
Caffeto is pursuing business growth beyond a single storefront. Castellanos told DCN, “We’re currently in the process of obtaining FDA approvals to begin importing green beans. Our vision is to supply other small businesses with high-quality coffee without overpricing it, making specialty coffee more accessible.” The company has sold green coffees through local and domestic channels from the family farm and has said in earlier interviews it hopes to franchise the concept in the future.
