Flying Fish, the fast-casual seafood chain known for mounting singing Billy Bass fish on its walls, is holding a ribbon-cutting ceremony Thursday, March 12, at its new Preston Road location in Plano, the restaurant's second outpost in the city.

The Plano Chamber of Commerce, which is hosting the noon event, notes the location at 4032 Preston Road in the former Dickey's Barbecue Pit space has been open since February 23. The ribbon-cutting runs from 12 to 1 p.m. CDT. Contact Jenny Avis at the Plano Chamber for details.

Founded in 2002 by Shannon Wynne and Larry Richardson, Flying Fish drew its concept from East Texas seafood joints along Caddo Lake and similar waterways. The chain has since expanded to 11 locations across Texas, Arkansas and Tennessee, with DFW-area restaurants already operating in Addison, Arlington, Coppell, Garland, Fort Worth, Dallas and Irving.

The Preston Road address fills a notable gap in the chain's north Plano coverage, something at least one regular noticed. "So glad we got one closer," Jay Hoffman wrote in a comment on food blog CraveDFW on March 1.

The restaurant's signature draws are its "Billy Bass Adoption Wall" and its "Liars Wall." Richardson described both in a previous interview with Star Local Media: "Our customers bring in their Billy Bass, and we put it up on the wall, give them an adoption certificate and a free basket of catfish. On the Liars Wall, we post your fishing photos along with your name and the type of fish." Richardson has said he looks for decor that is affordable and engaging because the walls help bring customers back.

The menu runs from po'boy sandwiches and fried fish fillets to hot chicken sandwiches and vegetarian options, with house-made key lime pie and bread pudding rounding out dessert. Sunday regulars can take advantage of The Preacher's Special, which offers $1.50 oysters all day. Kids Boats, priced at $6.95 for children 12 and under, come with a choice of hamburger, catfish, jumbo shrimp, chicken strips or chicken sandwich, plus fries and hushpuppies. The location opens daily at 11 a.m.
