Puerto Rican Food Truck Castillo Boricua Opens in Downtown Copperas Cove
Castillo Boricua brought Puerto Rican food to Copperas Cove's Taste of Cove Food Truck Park on March 7, marking the first locally run spot of its kind downtown.

Castillo Boricua debuted at the Taste of Cove Food Truck Park on Saturday, March 7, bringing Puerto Rican cuisine to downtown Copperas Cove alongside a partner concept called Sabor del Barrio in a joint grand-opening event at 105 W. Avenue E.
The two concepts launched together, with Castillo Boricua anchoring the Puerto Rican offerings and Sabor del Barrio expanding the menu into broader Latin flavors. The Taste of Cove Food Truck Park, situated in the heart of downtown Copperas Cove, served as the venue for the opening, which introduced what appears to be the area's first locally run Puerto Rican food operation.
Copperas Cove's food truck scene has grown steadily in recent years, and the addition of Caribbean-rooted cooking reflects a broader diversification of dining options in a city whose population includes a substantial number of military families with ties to Fort Cavazos. Puerto Rican cuisine, centered on dishes like pernil, mofongo, and arroz con gandules, remains underrepresented in Central Texas restaurant offerings, making the Castillo Boricua opening a notable addition to the local food landscape.

The Taste of Cove Food Truck Park at 105 W. Avenue E continues to serve as an incubator for new food concepts in Copperas Cove's downtown corridor.
