Lily Sushi Bar is bringing its north Fulton sushi concept to Johns Creek, with owner Lily Susana confirming an Oct. 29, 2026 opening at 3135 Medley Blvd inside The Medley, the 43-acre mixed-use development rising along Johns Creek Parkway. The launch is timed to coincide with The Medley's own grand opening, making Lily Sushi Bar one of the anchor dining tenants for the project's debut day.

The Johns Creek restaurant will occupy a ground-floor space at The Medley with approximately 50 indoor seats and additional covered patio seating. The team plans daily service, Monday through Sunday, though specific hours have not yet been announced.

The menu is expected to mirror what guests already find at the brand's Alpharetta and Milton locations: specialty rolls built around premium seafood and house sauces, sashimi, nigiri, hibachi entrées, teriyaki dishes, and bento boxes. Small plates including gyoza and edamame will round out the offerings, alongside a beverage program featuring beer, wine, and sake.

Johns Creek will be the third Lily Sushi Bar in north Fulton County, extending a footprint that the Alpharetta-founded brand has steadily built across the corridor. The Milton location filled in the middle stretch of that geography; Johns Creek now pushes the brand further east into one of the region's fastest-growing suburban communities.

Lily Sushi Bar joins a tenant roster at The Medley that developer Toro Development Company has been assembling for phase one. The lineup includes the first suburban location of Fadó Irish Pub, Trader Joe's, Shake Shack, Northern China Eatery, Sephora, Five Daughters Bakery, CRÚ Food & Wine Bar, 26 Thai Kitchen and Bar, Rena's Italian Fishery & Grill, and Knuckies Hoagies, among others. "The latest retail momentum further cements Medley as a premier destination for fashion, wellness, dining, and lifestyle experiences," said Goetz, a Toro Development official, in a statement.

Reservations and menu details will be available through Lily Sushi Bar's website, with build-out updates posted to the restaurant's Instagram account ahead of the October opening.
