Irish Acres in Masaryktown Hosts A Taste of Ireland, Ukraine Farm-to-Table

At Irish Acres, 2343 Gold Hill Road in Masaryktown, the sound of cow bells and clucking chickens greeted guests arriving for "A Taste of Ireland, Ukraine," a farm visit and farm-to-table gathering that blended Irish and Ukrainian foodways with conversation and an on-site tour.
The event, held Feb. 28, 2026, centered on a grand table set inside a large screened area at the Counihan property. Raised garden beds and birdhouses were affixed to the posts around the table, and the underside of the screened area was covered with little lights. Irish music played in the background as guests sat down to dinner, while flags of Ireland, Ukraine and the United States marked the entrance.
Hosts Farmer Mark Counihan, who is Irish, and his wife Oksana, who is from Ukraine, presided over the meal and the farm visit. Attendees were described as friends and included mostly other farmers who buy raw milk from Irish Acres, along with relatives of the proprietors. The program combined conversation with a walking tour of the property and shared plates gathered from the land.
The meal was described as mostly sourced from Irish Acres or locally. Starters included a cup of hardy chicken noodle soup with slices of hard-boiled eggs, served with fresh sourdough bread and fresh butter. Salad courses featured leafy greens and a Ukrainian beet salad. The main entree was chicken in a flavorful, creamy Bechamel sauce paired with light and fluffy mashed potatoes; one guest said, "her taste buds just exploded with her first bite of Oksana’s chicken with Bechamel sauce." Farmer Mark said he was in charge of dessert, while Oksana prepared everything else, and dessert that evening was an orange-cream pudding garnished with a sprig of mint.

The gathering emphasized farm-to-table provenance and communal dining rather than a formal program: guests toured the grounds, sampled produce and dairy, and lingered under the stringed lights in the screened dining area. The combination of Irish music, Ukrainian recipes and locally sourced ingredients highlighted the household’s cultural mix and the small-farm network that feeds part of Masaryktown.
Organizers did not publicize attendance numbers, ticketing details or whether "A Taste of Ireland, Ukraine" will repeat, but the event showcased Irish Acres at 2343 Gold Hill Road as a working farm that intersects raw-milk customers, family ties and cross-cultural food traditions in Hernando County.
