Jacksonville’s Artisan Bakeries Expand Across Neighborhoods, Sourdough Emerges as Standout
More than 312,000 artisan bakeries operated last year in the U.S. and Canada, and Jacksonville’s neighborhood bakeries, from Murray Hill to Springfield, are answering demand with long-fermented sourdoughs and regional specialties.

It's estimated that more than 312,000 artisan bakeries were operating last year in the U.S. and Canada. Fresh breads and pastries accounted for most of their baked goods, according to Market Growth Reports research data updated in October, and Jacksonville’s scene is expanding across Murray Hill, Baymeadows, Springfield and Southside to meet that appetite.
Community Loaves anchors Murray Hill at 1116 Edgewood Ave. S., open 8 a.m. to 2 p.m. Tuesday through Sunday and closed Monday. The bakery rotates a daily specialty bread such as Parmesan Black Pepper, spelt or rye, and also crafts bagels and baguettes alongside classic boules. Owner Meredith Corey-Disch, a longtime avid baker, says “artisan breads, especially sourdough, deliver deeper, more complex flavor than mass-produced, processed breads, thanks to careful fermentation and quality ingredients.” The café also serves breakfast and lunch, making it a neighborhood staple for fresh bread in Jacksonville.
In Baymeadows, Jax Bread Co. leans into New York-style offerings and European technique. “If you’re looking for New York-style bagels, Jax Bread Co. is for you,” Jacksonvillemag writes, listing varieties that include salt, onion, poppy seed, cinnamon raisin, Asiago and spinach Florentine, with the “everything” bagel described as the most popular. Jacksonvillemag also notes the shop’s French sourdough, labeled pain au levain and possessing “a darker crust and a slightly milder tang that sets it apart from its American counterparts.” Their signature African sweet bread is characterized as “a South African creation that’s soft, buttery and medium sweet (something between a Hawaiian sweet bread and Japanese milk bread), perfect for morning toast with jam or grilled cheese sandwiches.”

1748 Bakehouse sits “in the heart of Springfield just north of downtown,” offering sourdough breads, English muffins that enjoy a cult-like following, and “an impressive selection of croissants, pies and other sweet treats,” Jacksonvillemag reports. The shop displays gourmet gift items by the entrance and takes a Saturday tent to the Riverside Arts Market, selling focaccia, pumpernickel and baguettes under their RAM tent starting at 10 AM.
St. Gabriel Bakery is named among the four notable bakeries in the supplied material and is identified with a Southside location; the supplied excerpt does not include a street address, hours or an owner name for St. Gabriel. Across these neighborhoods, bakeries emphasize stone-ground flours and long fermentation times, and the local mix of family-owned and chef-driven shops is producing everything from crusty sourdough boules to pillowy milk breads and regional specialties. As Jacksonvillemag advises, “Of course, it’s always best to come early no matter which destination you choose.”
