Milk Street's Two-Day Sourdough Workshop Offers Deep Technical Immersion with Andrew Janjigian
Milk Street's two-day sourdough workshop with Andrew Janjigian capped at just 14 bakers, with Flourside bannetons and bench scrapers in hand.

Milk Street's In-Person Cooking School wrapped up a two-day sourdough workshop this weekend at 177 Milk Street in Boston, bringing chef and baker Andrew Janjigian together with a small cohort of attendees for what the school described as "a deeper, more technical immersion into naturally fermented bread baking than a single-evening class can provide."
The format stretched across two back-to-back sessions: Friday, March 13 from 5 to 9 pm, and Saturday, March 14 from 10 am to 5 pm. With the class capped at 14 attendees working in pairs at fully equipped stations, the setup leaned intentionally intimate, trading the scale of a lecture-style demo for the kind of hands-on repetition where you actually feel the dough.
Flourside sponsored the workshop and supplied the hardware. Attendees worked with Flourside bannetons, banneton covers, and bench scrapers throughout both sessions. The company, which positions itself around "unique, high quality tools worthy of their breads," is offering a 10% discount with the code MilkStreet10 at flourside.com for anyone who wants to carry the kit home.
Milk Street handled the sustenance side with a family-style dinner on Friday night and lunch on Saturday, both prepared by the Milk Street team. Complimentary beer, wine, non-alcoholic beer, and seltzer accompanied the meals, and attendees were encouraged to bring containers for leftovers. Digital copies of all written recipes went out to participants after class.

The vegetarian curriculum could be adapted for gluten-free and nut-free diets, though Milk Street is clear that its space is not allergen-free and advises anyone with a severe allergy to contact the school at cookingschool@177milkstreet.com before registering for any event.
Out-of-town bakers had access to discounted hotel rates at The Dagny and The Canopy, both located near the school, with booking instructions available by request through the same contact email.
Worth noting for future multi-day workshops: Milk Street Insider membership provides 15% off one-day in-person events at the Boston school, but that discount explicitly excludes retreats and multi-day events like this one. The school publishes its full in-person calendar, which runs through at least March 2026, on Eventbrite for those tracking upcoming programming.
