New Baked on Maine Café Opens on Brunswick's Maine Street
Baked on Maine, a breakfast-and-lunch café from the team behind Wildflours Gluten-Free Bakery and Mae’s Cafe & Bakery, officially opened on Jan. 2 at 42 Maine St. The café aims to fill a gap in dedicated breakfast service on Maine Street, offering smoked-meat sandwiches and both gluten-free and standard baked goods during busy morning and midday hours.

Baked on Maine opened its doors in downtown Brunswick on Jan. 2 after a soft opening earlier in the week, bringing a new dedicated breakfast-and-lunch option to Maine Street. The café is located at 42 Maine St. and is operating Friday through Monday from 8 a.m. to 2 p.m., positioning itself to capture morning commuters, weekend visitors and local shoppers.
The business is run by the same team behind Wildflours Gluten-Free Bakery in Brunswick and Mae’s Cafe & Bakery in Bath. Manager Ryan Ballard said the menu was developed to address a gap in dedicated breakfast service on Maine Street and features smoked meats such as smoked brisket and pulled pork served in both breakfast and lunch sandwiches. Baked goods will come from the existing Wildflours and Mae’s operations, with a mix of gluten-free and standard options available to customers.
Ownership links the new café to local roots and outside capital. The owner behind the trio of businesses is Nashville investor Ned Horton, who maintains ties to Brunswick. That combination of local connections and external investment is notable for downtown economic activity, as new small businesses often generate foot traffic and spending that spill over to neighboring retailers and services.
Initial days at Baked on Maine were busy, suggesting immediate consumer interest in a dedicated morning venue on the commercial corridor. For residents, the new café expands morning dining choices and may ease lunchtime pressure at nearby establishments on weekend mornings. The Friday-through-Monday schedule means weekday commuters and businesses that rely on daily downtown activity may see partial benefits; demand on Tuesdays through Thursdays will remain a potential opportunity for future expansion if traffic supports longer hours.

From a local economic perspective, the café represents a modest but tangible addition to Brunswick’s small-business sector. By leveraging established bakery supply chains from Wildflours and Mae’s, Baked on Maine reduces start-up friction and can scale product offerings more quickly than a standalone new bakery. For consumers seeking gluten-free options alongside traditional pastries, the combined menus offer broader choice without requiring travel outside the downtown core.
As the café settles into regular service, its performance over coming months will indicate whether a dedicated breakfast operation can sustain longer weekday hours and further contribute to Maine Street’s morning economy.
