James Beard-Nominated Poulette Bakeshop to Open Larger Mainstreet in Parker
Poulette Bakeshop signed a lease for a 2,800-square-foot Mainstreet storefront at The Juniper, moving from 19585 Hess Road to 19865 Mainstreet, Suite 130 in Parker.

Poulette Bakeshop, run by co-owners Carolyn Nugent and Alen Ramos, signed a lease for a 2,800-square-foot storefront at 19865 Mainstreet, Suite 130 in Parker’s new Juniper development, giving the James Beard–nominated bakery roughly double its current footprint and room for upgraded equipment and guest seating, The Denver Post and MileHighCRE reported. The space is one of four ground-floor retail bays at The Juniper and will be part of the development that began pre-leasing its 264 apartments in April 2025.
Nugent and Ramos started Poulette after moving to Colorado in 2020 and opened their first commercial space in 2021; a Denver Post photo shows the owners at the Hess Road shop on Dec. 6, 2023. Nugent told The Denver Post, “It’s just such a big step for us finally to have a space that feels appropriate for our offering,” and called the move “It’s an absolute dream.” The Hess Road location at 19585 Hess Road, Unit #107, will remain open until its lease ends at the end of May, The Denver Post reported.
Poulette’s national profile helped fuel interest in a Mainstreet storefront: the bakery was a James Beard Foundation finalist in the Outstanding Pastry Chef or Baker category and was named one of the New York Times’ “22 Best Independent Bakeries in the United States,” coverage across local and trade outlets noted. Paul Kim’s reporting cited Poulette’s signature French pastries — including kouign-amann, maple walnut tarts, and cheese danishes — as reasons the bakery rose to national acclaim.
The Juniper is co-developed by Colorado-based MGL Partners and Rockefeller Group and is positioned as a luxury rental residence at the gateway to downtown Parker. MileHighCRE reported Poulette signed for one of the four available ground-floor retail spaces and called the bakery the first confirmed retail tenant at The Juniper. Trevey Commercial Real Estate represented MGL Partners and Rockefeller Group in leasing, and eXp Commercial represented Poulette Bakeshop, MileHighCRE said.

Operationally, The Denver Post said the larger Mainstreet location will house upgraded ovens and other equipment to bolster production of Poulette’s pastries and confections, plus guest seating that allows patrons to linger. MileHighCRE quoted Nugent: “It has long been our dream to operate Poulette Bakeshop in the heart of Parker’s Mainstreet, and we’re thrilled to be expanding in a way that allows us to better serve our community,” linking the move to Poulette’s hospitality-first approach.
Sources differ on timing: The Denver Post’s March 4, 2026 story said the new location “is expected to open on March 11,” while other coverage described a fall opening window or said the bakery would move in fall 2025. Given the inconsistent timelines, The Denver Post’s March 11 date is the most specific published date to date. If the March 11 opening proceeds and the Hess Road lease runs through the end of May, the 2,800-square-foot Poulette at The Juniper will become a prominent retail anchor on Parker Mainstreet and expand the bakery’s production and seating presence in downtown Parker.
