Scratch-made Bolognese and Crispy Lasagna Fritters hit tables at 16 Merchants Way in Concord, New Hampshire on Tuesday as Evviva Trattoria opened its 11th restaurant and fourth New Hampshire location inside the Merchants Way retail corridor at I-93 Exit 17.

The 5,000-square-foot space features an open kitchen, a full bar, booths, and flexible seating sized for weeknight dinners, groups, and private events. Chef Anthony DePalma, Evviva's award-winning Director of Operations, oversees a culinary program built around scratch cooking across all eleven restaurants. The Westford, Massachusetts-headquartered chain has operated since 2012 under parent company RAVentures, which also manages real estate and development entities.

The Concord restaurant's most distinctive operational claim is gluten-free range: Evviva says more than 90 percent of its core menu is naturally gluten-free or modifiable, achieved, according to the company, "through preparing dishes to order in scratch kitchens on designated equipment and ensuring management delivers allergy-safe dishes." That commitment carries weight in a dining category that has historically sidelined gluten-sensitive guests. Evviva's New Hampshire push has accelerated steadily. The brand crossed the Massachusetts state line for the first time in October 2023, opening at 155 Marketplace Blvd in Rochester, then expanded to Bedford before debuting its tenth location overall at 350 Amherst St in Nashua on March 10, 2025. Concord, approved by the Concord Planning Board in November 2024, became the fourth New Hampshire address roughly 16 months after that vote. Seven Massachusetts locations, spanning Quincy, Hanover, Marlborough, Maynard, Stoneham, Westford, and Wrentham, anchor the broader footprint.

The Merchants Way development surrounding the new restaurant is still adding tenants. Market Basket, HomeGoods, NH Liquor & Wine Outlet, Jersey Mike's, Club Pilates, and a Concord Hospital outpost are already operating on the corridor; a Marshalls is expected to join them in Fall 2026.

Evviva has extended its footprint beyond kitchen design at other locations as well. The brand established a Joe Andruzzi Foundation Private Dining Room at its Wrentham, Massachusetts location, an arrangement publicly praised by Jen Andruzzi, president and CEO of the foundation. With Concord now open and the Merchants Way corridor still developing, Evviva's New Hampshire chapter is far from finished.
