Fabio Viviani Opens Zingaro Pasta Restaurant in Madisonville This March

Fabio Viviani is bringing his regional Italian concept Zingaro to Madisonville's Madison Square development on Medpace's campus, with the restaurant set to welcome its first guests on March 24 at 5380 Medpace Way.

The concept centers on handmade pasta and an open kitchen where diners can watch staff shape and cut fresh noodles. Viviani, a fan favorite on "Top Chef" in 2008, drew directly from his roots when designing the menu. "Growing up in Italy, every region has its own story told through food," he said in a news release. "At Zingaro, we're celebrating those traditions and bringing them together in one place, the way people do when they travel across the country."

The space runs roughly 5,000 square feet and seats up to 200 guests, with a full-service bar, open kitchen, and an outdoor patio designed for both large and small gatherings.

The menu reflects that regional-travel philosophy with serious range. Pasta dishes include wagyu short rib bolognese, rigatoni with parmesan fondue, and a carbonara raviolo topped with filet mignon. Starters cover cacio e pepe arancini, whipped fresh ricotta bruschetta, and a wagyu meatball. Heartier plates bring in pork ossobuco with saffron and bone marrow risotto, a Chianti smoked pork chop, and Mediterranean octopus and branzino. Dessert rounds out with tiramisu and warm sticky toffee pudding.

The beverage program includes a curated wine list pulling from Italy, France, Spain, Argentina, and the U.S., along with a dedicated sommelier section for guests looking to explore rare and exceptional vintage wines.

Zingaro is the latest addition to Fabio Viviani Hospitality's portfolio of more than 35 concepts nationwide. The group will also operate a neighboring European-style bar alongside the restaurant at the Medpace campus location.
