Sourdough Society Brings Generational Baking Tradition and Organic Loaves to Jersey City
Giota Kolaitis and her partner Sophie opened Sourdough Society at 210 Hudson St, selling four-ingredient organic sourdough loaves with pickup, delivery (Mon–Thu 7–9 p.m.) and market sales.

Giota Kolaitis and her partner Sophie opened a storefront for Sourdough Society inside Nana’s Deli at 210 Hudson Street in Jersey City, soft-opening on November 12, 2025 and scheduling a grand opening for November 28, 2025. The shop positions itself as a local source for simple, organic loaves and maintains a web storefront that lists ordering, pickup and delivery options and shows a © 2026 site copyright.
The bakery grew from a small experiment: Sophie, laid off from a corporate role, put the bread on Facebook Marketplace to see if they could make some money. Before long they had orders and reorders, established an LLC, built a website, and found a commercial kitchen. Giota grew up running her family’s diners and ice cream store, and the pair translated that hands-on food background into a retail bread operation.
Sourdough Society markets its bread on a strict-ingredient philosophy: loaves are made from four organic ingredients—organic bread flour, organic sea salt, homemade starter, and filtered water—and the shop uses the tagline “All Natural. Organic. No b.s.” Sophie framed that approach bluntly: “It’s hard to find all-natural bread with few ingredients at the grocery store. Our philosophy is that none of that is necessary for a wholesome life.” The storefront also notes that, because the bread contains no preservatives, loaves last five to seven days and can be frozen after that.
The classic sourdough loaf is the bakery’s most popular item; Sophie said, “It’s tried and true and healthy. That’s a big selling point.” The online shop lists product categories including Sourdough Bread, Sourdough Cookies, Sourdough Pizza Dough, Sourdough Dog Treats and more. Price points visible on the shop include “2 OGs for $22” and “Organic Sourdough Chocolate Chip Cookies (3 Pack) $10.00.” The site’s checkout supports Apple Pay, Google Pay, Visa, Mastercard, American Express, Discover and JCB via Square.

Ordering and pickup logistics are spelled out on the storefront: deliveries run Monday through Thursday with a delivery window of 7:00–9:00 p.m. and the bakery texts an ETA on delivery day; for pickup, customers should call or text (973) 699-1569 when they arrive and “pull up curbside in front of the set of doors next to the Nana's Deli A-frame sign.” Market sales continue as well: Coles Street Market at 305 Coles Street on Tuesdays from 3–7 p.m. (through November 25) and Hamilton Park Farmers Market at 344 Grove Street on Wednesdays from 4–7 p.m. (through December 2). The site also indicated a temporary pickup window for Monday orders between 3–7 p.m. at the storefront until regular retail hours began on November 28.
Founders are already expanding the menu. Sophie described the move into retail as timely—“The timing is great, with the markets ending for the season. We’ll have a big counter space for customers and a large wall space to display the loaves.” She also previewed take-and-bake sourdough pizza dough, saying “It will be great for family pizza night.” Giota is experimenting with sourdough-based phyllo pastries to honor her Greek heritage, a direction the profile framed as Giota “is literally living her grandmother’s legacy.”
Sourdough Society’s storefront combines market sales, a pickup-and-delivery cadence, and a four-ingredient product promise with in-store visibility at 210 Hudson Street inside Nana’s Deli, offering Jersey City a locally baked, preservative-free loaf and a small but growing lineup of sourdough goods.
