Between February 2025 and February 2026, the price of a pound of beef rose 14.4%, according to the USDA, with another 10.1% increase projected before the year closes. Taco Bell's answer, already visible across its 2026 menu roadmap, is chicken.

At the Live Más LIVE: A Night at the Palladium event in early March, CEO Sean Tresvant took the stage to outline a slate of new builds that lean heavily on poultry. Three crispy chicken nugget options debuted in the lineup: Diablo Dusted, Doritos Cool Ranch, and Flaming Hot. The brand also announced the Cantina Chicken Mexican Pizza with jalapeño citrus salsa, a chicken-based reimagining of one of the chain's most recognizable beef-anchored items.

Two more chicken builds hit menus on March 19: the limited-time Crispy Chicken Crunchwrap Slider and the permanent Cantina Chicken Rolled Quesadilla. The Slider puts a new wrinkle on a format crew already knows, requiring familiarity with a slimmer build during rush hours.

The protein shift extends to a global experiment. Through the Taco Bell app, Rewards members were able to vote on two items never before available in the U.S.: Thailand's Kickin' Chicken Taco and the Butter Chicken Taco from India. The Butter Chicken Taco won with approximately 64% of the vote and will be available at select locations later in the year.

Bo Davis, CEO of restaurant software company MarginEdge, captured the pressure operators are navigating: "The best [restaurant operators] can do is stay close to their numbers, rework menus quickly, and find creative ways to balance quality with affordability." Taco Bell's simultaneous move reflects that same logic. The chain's Luxe Value Menu, which launched nationwide on January 22, features 10 items priced at $3 or less, following a test in the Indianapolis area. Holding the price line for customers while engineering beef off the critical path wherever possible is the clearest signal yet of where the menu is headed.

The USDA's upper-bound forecast puts 2026 beef and veal price growth as high as 18.3%, a figure that would press directly on the cost-of-goods line for any beef-heavy item still on the board. As chicken builds multiply and a new global flavor arrives mid-year, ordering patterns, prep priorities, and line training will shift accordingly.
