Piada Debuts Burrata Marinara Pasta, First Burrata Menu Feature in Five Years

Piada Italian Street Food rolled out a limited-time pasta entrée called the Burrata Marinara, available Feb. 17 through June, marking the chain’s first pasta LTO in five years and its first menu feature with burrata. The entrée is offered in-store and online and is not available for catering.

The Burrata Marinara is built on Piada’s house-made marinara with roasted tomatoes and is topped with a full burrata ball, finished with basil pesto and cracked black pepper. Piada’s menu lists the ingredients as pasta, housemade tomato sauce, roasted cherry tomatoes, burrata cheese, basil pesto and grated parmesan, and places the item under the Tossed Pastas section where customers can choose spaghetti or rigatoni as their pasta shape.

The burrata used in the dish comes from BelGioioso Cheese, described by Piada as a family-owned producer of Italian cheeses based in Wisconsin. Burrata is presented here in a nontraditional role: “Burrata, traditionally served as an upscale appetizer in full-service restaurants, is featured here as the centerpiece of an entrée designed to be mixed into the sauce.”

Co-CEO Lance Juhas framed the release around Piada’s pasta focus, saying, “Pasta is at the center of what we do, so when we bring something new to our menu, it has to feel different.” Juhas added, “Burrata Marinara is an elevated dish that delivers unbeatable quality, something guests aren’t making at home.”

Piada Rewards members receive a limited-time badge when ordering the Burrata Marinara or adding burrata to an order, and members who purchase the entrée within the first week of availability will receive 100 bonus points. The chain reiterates that Burrata Marinara is not available for catering.

Menu calorie listings captured from Piada’s menu show inconsistent numbers for the new pasta: one menu snippet lists Burrata Marinara as (320 cal / 620 cal) while another lists it as (390 cal / 610 cal). For context, Piada’s Tossed Pastas section also lists Marinara Pasta at (320 cal / 620 cal), Carbonara at (510 cal / 940 cal), Diavolo at (330 cal / 630 cal) and Basil Pesto at (480 cal / 1010 cal). Piada’s salads include Lemon Kale Caesar (240 cal / 420 cal) and Farmers Market (380 cal / 650 cal).

Piada directs guests to its locations page on the company website for store-level availability; social promotion included an Instagram line reading, “CREAMY MOZZARELLA FILLED BURRATA . AVAILABLE NOW THROUGH JUNE!” Reporters and customers seeking official nutrition facts, pricing and exact in-store availability should confirm those points directly with Piada.
