Toronto's Pasta Privato Opens as a 30-Seat Hidden Pasta Bar Downtown
Pasta Privato opens March 27 at 11 Church St., tucked next to Notte, with 30 seats and an $125 eight-course tasting menu from Chef Michael Angeloni.

Tucked behind Notte Ristorante's entrance at 11 Church Street, Pasta Privato is the kind of place you might walk past without knowing it's there. That's entirely the point. The 30-seat pasta bar, described by its team as "hidden but intentional," opens publicly on Friday, March 27, bringing an eight-course tasting menu priced at $125 to downtown Toronto's Church Street corridor.
The project brings together Chef Michael Angeloni, who has been collaborating with Notte, partner Adam Teolis, and restaurateur Yannick Bigourdan. Bigourdan has had a relentless stretch recently: he launched The Carbon Snack Bar, a fast-casual spinoff of his longstanding Carbon Bar, in the summer of 2025, then oversaw the complete rebrand of Amano Trattoria into Notte in the first days of 2026. Pasta Privato is his third major move in less than a year, and arguably his most intimate one yet. His wider portfolio includes Berczy Tavern, The Carbon Bar, The Carbon Snack Bar, Restaurant Lucie, and Notte Ristorante.
Angeloni is leading the kitchen with a focus on housemade pasta and modern Italian technique. The menu is described as ever-changing, built around seasonal Ontario ingredients and anchored by pasta made fresh in-house daily. The eight-course format includes dishes that signal both classical training and a willingness to push: tajarin, the fine Piedmontese egg noodle also known as tagliolini, dressed in a prosecco-butter sauce and finished with Kaluga caviar; agnolotti stuffed with Iberico pork and rabbit; and tagliatelle with a beef shank Genovese ragu. Beyond the tasting menu, the kitchen will also offer small plates, antipasti, and secondi. Sommeliers will be on hand to provide curated wine pairings throughout.

The concept operates under what the team calls a "refined rustic" ethos: the experience is described as painstakingly curated while the service is designed to feel welcoming and unpretentious. The 30-seat dining room, accessed through Notte's entrance, is built to encourage what the team calls "discovery and connection," placing Pasta Privato firmly in the tradition of the intentional hideaway rather than the accidentally obscure.
Toronto's appetite for smaller, craft-driven Italian concepts has grown steadily, and Pasta Privato is positioning itself squarely within that current. At 30 seats and $125 a head for the full tasting, it isn't aiming for volume. It's aiming to be the room people tell each other about.
